Sinukmani (Laguna)


Sinukmani is a traditional wood-fired rice cake that is served only during special occasions due to the tediousness of preparation. The glutinous rice is bathed in coconut milk and brown sugar, continuously stirred until cooked. A separate cooking vat simmers fresh coconut cream until the toasted coconut curd forms a crown to crown the sinukmani.
